Fiesta Bean Salad
1/2 cup onion chopped
2 medium cloves garlic pressed
2 cups mixed cooked beans (or bean of your choice)(2 cups cooked = about 1 cup dry)
1 cup corn
1 cup cherry tomatoes chopped
1 chopped red bell pepper chopped
2 tablespoons pumpkin seeds
ΒΌ cup fresh cilantro chopped
2 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon sea salt
1 pinch black pepper
4 oz. tempeh chopped
1 tablespoon chia seed
1 tablespoon black sesame seed
Directions: cook the beans with 6 cups of water in a Crockpot on low overnight. Remove the beans from the water and mix with the other ingredients.
